L-Ikla t-Tajba, (bon appétit), sees young people embarking on a culinary journey and learning the ropes of cooking, under the supervision of Head Chef David Darmanin, a man who is passionate about Malta’s culinary tradition.
For this year’s edition of L-Ikla t-Tajba, young people, hailing from Aġenzija Żgħażagħ’s Youth Inc. programme, have created their own original recipes using fresh, local Maltese ingredients which they prepared and served during Notte Bianca from a pop-up kitchen erected at Castille Place.
L-Ikla t-Tajba 2015 had a varied menu incorporating fusion food such as Maltese-Vietnamese red prawn spring rolls, as well kebabs filled with pulled pork and pulled horse. Other tasty curiosities include savoury vegetable qassatat, fried rabbit burgers, hot dogs filled with lamb instead of processed meat, and the Ftizza, a ftira-pizza hybrid with a sourdough base.
